Answered Prayers

6 Weeks Pregnant

Eli and I have been praying for a family since we got married on 26 June 2010. And here we are, a testament to an answered prayer! We are currently six weeks pregnant!  Truly a miracle!  God has brought us SO far in the last year and eight months of our marriage.  It started out very rocky and tumultuous due to my having something likened to post traumatic stress disorder (PTSD) with aggravated Obsessive Compulsive Disorder (OCD) and major anxiety disorder (MAD) that I had no clue of.  All I knew was that I panicked at nearly every event Eli and I were together - feeling like I was going to be abandoned, forgotten about, overlooked, etc.  This caused me to become very intolerant, aggressive and  jealous.  I was constantly worried that my husband was going to forget about me and leave me so I was wrapped up plagued by constant fear and anxiety.  We started marriage counseling with a Christian Marriage and Family counselor named Joseph Kozinski who not only negotiated his price to fit our budget but took God's perspective and made it ours as we ARE His children.  After seeing that I needed more help than just talking through things and explaining PTSD to us, he set me up with Dr. Kohut out of San Bernardino to help evaluate and place me on an anti anxiety medication.  I have had the most normal and rational life ever since which has allowed my marriage to soar and my body chemistry to regulate and to conceive!  I have never been so clear headed emotionally!  Thank You Lord for your never ending involvement in our lives and for seeing us through the good times and the bad!  We are forever Yours.

Now back to the pregnancy!  So far at six weeks I have been feeling a bit tired.  Usually right after I do something, anything, I feel like rest is needed.  Also, my baby feeders are quite tender.  I feel cramping in my uterus area from time to time which is totally normal.  Eli is SO happy!  Neither of us can keep our mouths shut about it!  We love telling people that we are pregnant and especially to pray for a full term and perfectly healthy baby!  And now that you know, please join in on the prayer ; )  I plan on keeping you all updated week by week with the priceless belly pictures so keep reading and I would love to hear your thoughts!

Lots of love,
Candace

Ohhhh... Fudge... My Mouth Is Watering!

The first time I made fudge, I was, oh.... say 17 years old or so.  I melted the butter with the sugar over a low heat... then the chocolate chips... stirring and stirring, so it wouldn't burn you know.  I had little to worry about in terms of sugar diabeties, excess fat, blood pressure and the sort because I was, well, I was 17!  Those were the days I could slam down an entire pizza by myself without gaining a pound or even worrying about the health stuff.  These days are different!  It's been over a decade since those "eat anything, when ever and where ever" days and my outlook on nutrition differs greatly.  It took some extremism (eating disorders, no fat, calorie counting, you name it, I went there!) to finally arrive at the conclusion that I want a fully nutritional diet, the way God, the Creator and Savior of the world, intended.  That includes unaltered full fat, unaltered cholesterol, preferably organic, grass fed (never grain fed, not even at the end of their lives), no processed sugars of any kind, soaking grains, nuts and seeds, make everything in your own kitchen; Picking up what I'm putting down?!  That's right!  I've put down the boxes of manufactured foods in order to pick up raw foods that I make and enjoy (enjoy the awesome flavors as well as the nutritional benefits!)  All that aside, being that it's the Christmas season (yes, I am a Christian and celebrate Christmas), we needed some fudge around here so I went on the hunt!

Here's What I found!  Got your pen and paper handy?!  Enjoy this simple delicious recipe that is full of health benefits and nothing fake!

Ingredients: Five Total
  • 1C Coconut Oil
  • 3/4 C Carob Powder (you may use Cocoa Powder but Carob is a bit healthier and hardly different in taste plus, carob is naturally a bit sweet where cocoa isn't!)
  • 1/4 C Honey
  • 1/4 C Almond Butter (Try making it yourself.  I'll follow up with a post on "how to" within a day or so)
  • 1 Tbsp Vanilla Extract

Add it all to a bowl, preferably stainless steel.  Get a pot of water (approximately 2/3 of an inch of water will do) nice and hot.  When it starts to boil, put the bowl of ingredients on the pot, making sure the bottom of the pot is not touching the bottom of the bowl, we want indirect heat here.  Stir constantly until all the ingredients are mixed well and totally melted and dissolved (approx 5-10 minutes).  Next, line a baking dish with parchment paper and pour the mixed and melted ingredients into the dish.

When it is totally solid, slice into cute shapes of your choice ; ) and enjoy!  Keep these babies cold as coconut oil melts at around 70 degrees.  Try putting nuts in it next time!

The original recipe came from a compilation of YouTube videos which you can find here.  The nice lady in the video series says the credit for the original recipe goes to Dr. Jordan Rubin.  Dr. Jordan Rubin is the author of "The Maker's Diet" which I plan on following come New Years when the food madness of this beautiful season is passed.  I will keep you posted and am planning on blogging about the details!  Looking forward to it!

As usual, I would love to hear your feedback!  Tell me if you made them and what you thought of them!  I personally think this is my new recipe for the rest of my life!

My Latest Read: Change Your Brain Change Your Life

This is a book that has changed my life.

I know that that is one heck of a statement to begin a post with, but it really has.  Being one who struggles with lots of brain issues from anxiety to depression to OCD, this book has led me in paths of understanding that has caused me to not only be more gentile with myself, but most importantly, with others.

The author, Daniel G. Amen, M.D., is a child and adult psychiatrist, self-help adviser, best selling author, medical director of the Amen Clinic, a clinical neuroscientist, and I am sure he has achieved much more.  In his book, he helps people understand brain physiology, the effects of brain damage incurred during accidents/fights/head banging/etc., the effects of drugs and alcohol on the brain, and so much more.

The most amazing aspect of the book is that it divides the brain into five sections; the Deep Limbic System, the Basal Ganglia, the Prefrontal Cortex,  the Cingulate System, and the Temporal Lobes, and how each part directly effects how a person behaves.  Dr. Amen explains how, through SPECT imaging, he and many of his associates have been able to locate which parts of the brain, when over or under active, are responsible for people living in unusual realities including but absolutely not limited to depression, rage, violence, confusion, ADD/ADHD, eating disorders, and a ton of other clinically proven behavioral abnormalities ranging from severe to slightly "off."

"If you are anxious, depressed, obsessive-compulsive, prone to anger, or easily distracted, you probably believe these problems are 'all in your head.'  In other words, you believe your problem is purely psychological.  However, research that I and others have done shows that the problems are related to the physiology of the brain-and the good news is that we have proof that you can change that physiology.  You can fix what's wrong for many problems."  (Daniel G. Amen, M.D. Pg. 3, Change Your Brain, Change Your Life)

Being one who constantly struggled/struggles with perceiving accurate reality, I have taken great pleasure in my introverted nature to hide from what I have trouble understanding.  The problem with this is that it is difficult to maintain relationships for any period of time before I find it "safer" to hide in my introversion.  After reading this book however, I gained great insight to what could be (and recently found out for sure is) a hereditary brain function imbalance.  I was inspired to get help so I could live a clearer and freer life.  Free from constant debilitating anxiety, chronic fear, and severe depression.

Before I read  Change Your Brain, Change Your Life, I was under the crippling pressure to just work harder at changing my behavior, often hearing from others so free to counsel, "if you just.........you'll feel better," or "You have to just throw yourself out there," and "what you need to do is............," and the well meaning counsel never ended.  It only threw me into a greater pit of despair because the harder I tried, the more it seemed I failed.  And I would hide more.  Worst of all, it seemed that I was alone because I was the only one who had a challenging time fixing myself (never without desperate prayer)!!!!!!!!!!  It seemed I was destined to struggle, destined to never feel the love of others (despite their out pour of love, I just couldn't receive it).  After reading and relating to specific brain impairments,  I sought help (not from Amen but a local Dr.) and I finally have hope!  Well, I can't say finally because through prayer, I always saw a light, it was just constantly out of reach.  But now, I feel the warmth of that light!!!!!!!!!!!  Hope!

So, if you or someone you love is struggling with life, YOU ARE NOT ALONE!  Because this book is full of absolute insightful case studies and information, it is by nature a quick read.  Pick it up and move on to a healthier, happier and fuller life!

May God bless you dearly on your journey!

In Need Of A Little Inspiration Today

"Now we cannot...discover our failure to keep God's law except by trying our very hardest (and then failing).  Unless we really try, whatever we say there will always be at the back of our minds the idea that if we try harder next time we shall succeed in being completely good.  Thus, in one sense, the road back to God is a road of moral effort, of trying harder and harder.  But in another sense it is not trying that is ever going to bring us home.  All this trying leads up to the vital moment at which you turn to God and say, You must do this, I can't."
C.S. Lewis

"Life is difficult."
Scott Peck

God knows you and He promises that He will never leave you or forsake you.  He has ordained that moment to do something in you and through you.  In the heat, remember this.

Thank You my God.  Do what only You can do.  I surrender.
